Always go for the 9 foot ceiling if you have the choice.
I added some blocks and toenailed them in. Hi if you have the 42 inch cabinet up to the top and add a 12 inch cabinet stacked under that will fill the 9 ft. And i totally agree with kivi s comment above that the extra cost now will be insignificant in a few years and you will be happy that you spent the extra money.
