Always go for the 9 foot ceiling if you have the choice.
I added some blocks and toenailed them in. Hi if you have the 42 inch cabinet up to the top and add a 12 inch cabinet stacked under that will fill the 9 ft. And i totally agree with kivi s comment above that the extra cost now will be insignificant in a few years and you will be happy that you spent the extra money. When stacking cabinets there are plenty of ways to dictate the overall aesthetic.
In a kitchen with a 9 foot ceiling you re usually left with 54 inches of space for upper cabinets. Easy access to kitchen cabinets is one thing a lot of people want and if you also want this then your cabinets should not go all the way up to the ceiling. This will be quite stressful and a bit dangerous. If your cabinets are too high you will need a ladder to access them.
Any crown molding or trim will continue around the room above the cabinetry. So this is how it would measure up. With rta or ready to assemble cabinets you would normally use tall 42 inch wall cabinets leaving you with a 12 inch space between your cabinet tops and the ceiling. The kitchen cabinets and molding do not go to the ceiling and the wall cabinets and trim will be just below the ceiling. It makes the space feel bigger and brighter. Cabinets and trim go all the way to the ceiling but the cabinets will probably need to be stacked. A general rule of thumb is for wall cabinets to be mounted so the bottom edge is 54 inches above the floor which means that an 8 foot tall ceiling creates 42 inches of available space for wall cabinets while a 9 foot tall ceiling has 54 available inches.
